Rural France is not at its best when it comes to shopping. You need to go to a bigger city, e.g.:

Carcassonne.

France is at its best when it comes to markets. There is a market in the region almost every day in a town in the neighbourhood. Tips: Occitan markets are on Sunday morning in Esperaza and on Monday morning in Mirepoix. Limoux has a market on Friday morning. Quillan on Wednesday morning and Saturday morning.
There are several special markets throughout Summer, like the Thursday evening markets in Quillan or markets with a theme, like local produce and art.
The most wonderful antiques or rare items pop up in a brocante, either on a market or in a shop.

Beaches
The beaches here in southern France are amazing. Not only does it go on for miles and miles, seemingly without an end.
There are some great sandy beaches, romantic small beaches, and beaches in the middle of town like on the beautiful Vermeille coast.
This strip is also called little Greece for its charm and climate. It has the most sunshine in the whole of France!
There are boat trips and many watersports but also places where you can rent comfortable chairs not far from a snack shop and public toilets, like in Collioure.

There are many wonderful churches and cathedrals throughout the area, most of the smaller churches are almost always closed. But the larger ones like in Narbonne, Carcassonne, Beziers, Elne and Perpignan are almost always open. Every church has its story.
The most interesting church is possibly the Mary Magdalene church in Rennes-le-Chateau, with its mysterious hints left there by one of her former priests, abbé Saunière (ca. 1900). The meaning of the hidden clues are being examined by many people all over the world and has inspired Dan Brown to write the Da Vinci Code.
